  • Here's a delicious recipe for chipolata sausages that you can try:

    - 1 pound (450g) chipolata sausages
    - 2 tablespoons olive oil
    - 1 onion, finely chopped
    - 2 cloves garlic, minced
    - 1 red bell pepper, thinly sliced
    - 1 yellow bell pepper, thinly sliced
    - 1 green bell pepper, thinly sliced
    - 1 teaspoon dried oregano
    - 1 teaspoon dried thyme
    - Salt and pepper, to taste
    - 1/4 cup white wine (optional)
    - 1 can (14 ounces) diced tomatoes
    - 2 tablespoons tomato paste
    - 1 teaspoon sugar
    - Fresh parsley, chopped (for garnish)


    1. Heat the olive oil in a large skillet over medium heat.

    2. Add the chipolata sausages to the skillet and cook until they are browned on all sides. Remove them from the skillet and set aside.

    3. In the same skillet, add the chopped onion and cook until it becomes translucent, about 2-3 minutes.

    4. Add the minced garlic and cook for another 1 minute until fragrant.

    5. Add the sliced bell peppers to the skillet and sauté for about 5-7 minutes until they start to soften.

    6. Stir in the dried oregano, dried thyme, salt, and pepper. If using white wine, pour it into the skillet and let it simmer for a couple of minutes to reduce slightly.

    7. Add the diced tomatoes, tomato paste, and sugar to the skillet. Stir well to combine.

    8. Return the browned chipolata sausages to the skillet, nestling them into the tomato and pepper mixture.

    9. Reduce the heat to low, cover the skillet, and let the sausages simmer in the sauce for about 15-20 minutes, allowing the flavors to meld.

    10. Taste and adjust the seasoning as needed.

    11. Serve the chipolata sausages hot, garnished with chopped fresh parsley.

    12. These sausages are great served with crusty bread, mashed potatoes, or even pasta. Enjoy!
